Your kids prefer known foods - and *you* asked for a one-pot rice and lentil dish with vegetables. This might fit the bill. It has some asian spices in it, but you could cut them right down or substitute something else or increase the chili powder for yourself so that it would be more exciting than for the kids ;=) It has tomatoes so that it'll blend nicely with that ketchup they put on everything. I have indicated substitutions not to say that it would be the same, but that it would work ;=) LENTIL AND RICE CASSEROLE - Kid-Friendly ;=) 1 cup split red lentils One-third cup long grain white rice (or use brown and cook longer) 5 cups vegetable broth 1 leek cut into chunks (or use half a mild onion) 3 garlic cloves, crushed (or to taste) 14-ounce can chopped tomatoes 1 tsp ground cumin (or to taste) 1 tsp chili powder or cayenne (or to taste) 1 tsp garam masala (or to taste) 1 red bell pepper, seeded and sliced (green okay but not so pretty) 3 or 4 ounces broccoli florets (frozen okay) 8 baby corn-on-cob, halved lengthways (or frozen/canned kernels) 2 or 3 ounces green beans, halved (or frozen/canned) 1 Tablespoon shredded basil or herb of your choice (or half dried) salt and pepper to taste fresh herbs to garnish Put lentils, vegetable stock and rice in a large casserole or dutch oven and cook over low heat for 20 minutes, stirring occasionally. Add the leek or onion, garlic, tomatoes with juice, cumin, chili powder, garam masala, sliced bell pepper, broccoli, corn, and grren beans and bring to a booil, reduce heat cover and simmer for a further 10 to fifteen minutes or until the vegetables are cooked. (If you have used unthawed frozen veg., you might want to adjust this time.) Add the shredsws basil or whatever and salt and pepper to taste. Garnish and serve. NOTES: 1. This also works with other vegetables, such as peas, carrots, cauliflower, etc., but these were suggested in the original recipe and make a nice colour presentation ;=) 2. Additional garam masala can be added at the table for those who like it spicier. We also put a shaker of crushed dried chilies on the table for dishes like this. Hot sauce works too, but kinda changes the ethnic trend of the dish - if anyone cares ;=) - but so does ketchup *LOL* 3. If your kids don't freak at the idea, peanuts scattered on top or mixed in just before serving give a nice exciting surprise and crunch as well as adding more of that protein you are worrying about for them ;=) Put a dish of them on the table?
