Guest guest Posted May 28, 2003 Report Share Posted May 28, 2003 Frosted Peaches 1 package (8oz) Neufchatel cheese, softened 2 Tbs apricot preserves 1 cup pineapple tidbits, drained 3 cans (15.25oz each ) peach halves, drained Leaf lettuce Sprigs of mint ~ optional In a small mixing bowl, beat the neufchatel cheese and preserves until blended. Stir in pineapple. Place peaches cut side up on a lettuce lined serving platter; fill with cheese mixture. Garnish with mint if desired. Yield: 12 to 15 servings (that is if you only eat one!)
