Guest guest Posted May 25, 2003 Report Share Posted May 25, 2003 Pecan-Pear Tossed Salad Dressing: 2 Tbs fresh raspberries 3/4 cup olive oil 3 Tbs cider vinegar 2 Tbs sugar 1/4 tsp pepper Salad: 4 medium ripe pears, thinly sliced 2 tsp lemon juice 8 cups torn greens 2/3 cup pecan halves 1/2 cup fresh raspberries 1/3 cup crumbled feta cheese For dressing, press raspberries through a sieve, reserving juice but discarding the seeds. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar and pepper and raspberry juice; shake well. Toss pear sliced with lemon juice. In a salad bowl, combine salad greens, pears, pecans and raspberries.Sprinkle cheese over top. Drizzle with dressing. Yield: 8 servings This recipe came from Marjean Claassen. I have one pear tree in my yard. It is small and does not produce a lot of fruit each year, but what it does grow is delicious.
