Guest guest Posted May 23, 2003 Report Share Posted May 23, 2003 Red Potatoes with Olives, Feta and Mint 1 3/4 pds. small red skinned potatoes, quartered 1 bunch fresh mint 8 oz. feta cheese, crumbled 1/4 cup olive oil 3/4 cup chopped black olives Simmer potatoes with 3 tbsp. mint for 12 mins. Drain and transfer to a large bowl. Add feta, olives and mint. Drizzle in oil. Mix gently. Season with salt and pepper. Serve warm. (6 servings) Notes: I made this as a cold dish. After simmering the potatoes, I waited for them to completely cool before adding remaining ingredients. I used a small can of sliced black olives and chopped them. Increase or decrease ingredients as you see fit to please your tastes, or for those that you are making it for. Once, during Prohibition, I was forced to live on nothing but food and water. - W.C.
