Red Potatoes with Olives, Feta and Mint

 

1 3/4 pds. small red skinned potatoes, quartered

1 bunch fresh mint

8 oz. feta cheese, crumbled

1/4 cup olive oil

3/4 cup chopped black olives

 

Simmer potatoes with 3 tbsp. mint for 12 mins.

Drain and transfer to a large bowl.

Add feta, olives and mint.

Drizzle in oil.

Mix gently.

Season with salt and pepper.

Serve warm.

 

(6 servings)

 

Notes: I made this as a cold dish. After simmering the potatoes, I waited

for them to completely cool before adding remaining ingredients. I used a

small can of sliced black olives and chopped them. Increase or decrease

ingredients as you see fit to please your tastes, or for those that you are

making it for.
