Vegan White Chocolate

 

1/2 cup cocoa butter (food-grade only!)

1/3 cup natural sugar

1/3 cup soymilk powder

1/2 cup water

1/2 tsp powdered soy lecithin (granules ground to powder OK)

1 tsp vanilla powder

 

Mix water, soymilk powder, and sugar in the top pan of a double boiler.

Cook over medium heat, stirring constantly, until sugar is melted. Turn

off heat.

Mix in cocoa butter, stirring until blended.

Mix in lecithin, stirring until blended.

Mix in vanilla powder, stirring until thoroughly blended.

Pour onto a greased plate.

Let cool completely. Break into pieces. Store in ziplock bags.

Keep refrigerated.

This sounds really good. I can just imagine making

some of this and drizzling it over a cake or cookies.

However, several of the ingredients seemed strange to me.

Not strange in the way that I have never heard of them

before, but more strange in that I don't know as I have

ever seen them for sale in the stores. Of course I haven't

ever really looked for food grade cocoa butter, powdered

soy lecithin or vanilla powder. Where do you find items like

these? Do you order them online? TIA

You can get the lecithin and vanilla powder from

frontierherb.com. And I believe kitchenkrafts.com has

cocoa butter (and lots of other candy making

supplies).
