Guest guest Posted May 19, 2003 Report Share Posted May 19, 2003 I have made this many different ways and it always comes out wonderful whether I use light cream cheese or regular, soy margarine or real butter, OR yogurt instead of sour cream; you simply can't fail. When this is shared with others I am asked for the recipe. Washes down perfectly with a nice cup of coffee or tea. Frosted Banana Bars 1/2 cup soy margarine 1 1/2 cups sugar 2 eggs 1 cup sour cream or yogurt 1 tsp vanilla extract 2 cups all-purpose flour 1 tsp baking soda 1/4 tsp salt 2 medium ripe bananas, mashed (about 1 cup) Frosting: 1 package (8oz) lite cream cheese, softened 1/2 cup soy margarine, softened 2 tsp vanilla extract 3 1/2 to 4 cups confectioners' sugar In a mixing bowl, cream margarine and sugar. Add eggs, sour cream (or yogurt) and vanilla. Combine flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas. Spread into a greased 15x10x1 inch baking pan. Bake at 350 degrees for 20 to 25 minutes or until a toothpick inserted in middle comes out clean. Cool. For frosting, in a mixing bowl, beat cream cheese, margarine and vanilla. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost bars. Store in refrigerator.
