Hey there - I just joined the list and had to jump in on this one. I learned a great way to dice vegetables from a chef. I'm not sure I can describe this well...with a sharp knife, cut five or six times in one direction WITHOUT GOING THROUGH TO THE OTHER SIDE. Then you cut five or six times in the other direction (like a tic tac toe, except you have many lines, not just two). Then, you put it on it's side and slice through, and you end up with a diced vegetable. Does this make sense? It works great with onions and it would work with tomatoes too. What a cool board!
