This is really delicious, but the only thing I would add

is salt! *lol* But then that would change the nutritional

analysis... not that I care, but I posted it as it is, and you

can play around with it to fit your taste.

Low-Fat Macaroni and Cheese

 

1 cup skim milk

1 1/4 cup redeuced fat cheddar cheese

2/3 cup fat-free cottage cheese

Pepper to taste 2 1/2 cups cooked elbow macaroni

1 Tbs grated onion Paprika

 

In a blender or food processor, combine the milk, the

cheeses and pepper. Cover and process until smooth

and creamy. Pour into a bowl; stir in macaroni and

onion. Transfer to a 1 1/2 quart baking dish coated

with non-stick cooking spray. Sprinkle top with paprika.

Bake, uncovered, at 350 degrees for 1 hour os until

heated through.

Yield: 4 servings

Nutritional Analysis: One 3/4 cup serving equals

233 calories, 372mg sodium, 12mg cholesterol,

30gm carbohydrate, 20gm protien, 3gm fat, 1gm fiber.

Diabetic Exchanges: 2 starch, 2 very lean meat

P.S. Oh yeah, try to just eat 3/4 cup. Ha!

Isn't that the problem with most serving sizes?? LOL! At least for

me it is........I think they need to double, or even triple, most of

those! LOL!
