Guest guest Posted May 9, 2003 Report Share Posted May 9, 2003 These are very delicious. My son wanted me to add that he thinks they are best when you sprinkle some Cajun seasoning over them lightly. Cheddar Potato Strips 3 large potatoes, cut into 1/2 inch strips 1/2 cup soy milk 1 Tbs soy margarine 1/2 cup shredded cheddar cheese 1 Tbs minced fresh parsley In a greased 13x9x2 inch baking dish, arrange potatoes in a single layer. Pour milk over potatoes. Dot with margarine; sprinkle with salt and pepper. Cover and bake at 425 degrees for 30 minutes or until potatoes are tender. Sprinkle with cheese and parsley. Bake, uncovered, 5 minutes longer or until cheese is melted.
