Today's Topic: Cooked News About Tomatoes

 

Recent reports about cooking tomatoes making them better for your

health circulated after an article appeared on the Web April 17,

2002 in the Journal of Agricultural and Food Chemistry. Researchers

found that while vitamin C decreased after cooking, the level of

lycopene more than doubled after 30 minutes of cooking. The net

antioxidant activity in the cooked tomatoes increased significantly.

Lycopene is the red pigment in tomatoes, watermelon, and pink

grapefruit. It has strong antioxidant activity. It is being studied

for many healthful effects against heart disease and prostate

cancer.

But it is still far too early to recommend lycopene pills or even

eating tomatoes for a specific health effect.

 

HERE'S WHAT YOU NEED TO KNOW: This is not the first,

second or third report on lycopene increasing upon cooking. Heating

breaks open the cells and drives off water - both serve to increase

the lycopene concentration. In fact, cooking with a small amount of

fat greatly increases absorption by the intestine. This is another

example of processing that makes your food healthier.
