Guest guest
This one is kind of a splurge recipe in the calorie counting department, but sometimes you just have to treat yourself. I served this over asparagus, but I think it would work well over many different vegetables, combinations of beans or whatever you want to add a dressing to. Creamy Herb Dressing 1 1/2 cups mayonnaise 2/3 cup whipping cream 1/2 cup chopped green onions 1/2 cup freshly minced parsley 1 tsp vegetarian Worcestershire sauce 2 Tbs minced chives 2 Tbs lemon juice 2 lbs. fresh asparagus spears, trimmed In a blender, combine the first seven ingredients; cover and process until smooth. Cover and refrigerate for at least 1 hour. In a skillet, cook asparagus in a small amount of water for 3 to 4 minutes or until crisp-tender; drain well. Spoon dressing over asparagus. Yield: 6 servings (2 1/2 cups dressing) ~ PT ~ I don't need time. What I need is a deadline. ~Duke Ellington, jazz pianist, composer, and conductor (1899-1974)
