I used MorningStar Farms brand and I don't have the box here now, so I cannot say for sure if they are a vegan product. Anyway, this recipe was so easy and fast to prepare, but tasted like I fussed. I found it in a magazine, but altered it to make it vegetarian. In the original recipe the person used real bacon along with the bacon fat ~ ew. I adjusted it to use the soy version and lightened it up with olive oil. I bet it tased just as good, if not better than the original; way healthier too. Fabulous Fettuccine 1 pkg. vegetarian soy bacon, diced 3 Tbs olive oil 2 large onion, chopped 2 cans (14.5 oz each) diced tomatoes, undrained 4 garlic cloves, minced 2 tsp dried tarragon 1/4 tsp salt 1/4 tsp pepper, or more to taste 1/8 tsp cayenne pepper 1/4 cup minced fresh parsley 1 pound fettucine Shredded Parmesan cheese In a skillet, cook the veggie bacon in the olive oil until crisp. Remove bits from pan with slotted spoon to a bowl, leaving some oil in the skillet; set aside. Add onions to the skillet and saute until tender, about 5 minutes. Add tomatoes and garlic; simmer, uncovered, for 5 minutes. Stir in tarragon, salt, pepper and cayenne; cover and simmer for 20 minutes, stirring occasionally. Meanwhile, cook fettuccine according to package directions. Add parsley to the tomato mixture; simmer 5 minutes longer. Stir in soy bacon bits. Drain fettuccine; top with tomato mixture. I had thrown my box away, so couldn't be 100% sure.
