This is a really nice salsa recipe. I added more garlic

than the original recipe called for. I admit I was quite

intrigued over what the microwaving process had to

add to this recipe. I think it is nuked in such manner

to help in the combining of flavors or breaking down

of the tomatoes, peppers, and onions a bit so they

are more tender.

 

Microwave Salsa

 

3 medium tomato, chopped

1 green onion, sliced

3 garlic cloves, minced

3 Tbs finely chopped green pepper

1 Tbs lemon juice

1 1/2 tsp minced fresh basil or 1/2 tsp dried basil

1/2 tsp chili powder

1/2 tsp salt

1/8 tsp pepper

 

In a microwave-safe bowl, combine the tomatoes,

onion and garlic. Add green pepper, lemon juice

and seasonings; mix well/ Microwave on high for

45 to 60 seconds or until heated through. Salsa

can be stored in the refrigerator for up to three days.

Yield: 4 cups

Hmmm - warm salsa? Very interesting.... On a side note - does that

mean the salsa goes bad after three days? That would be no good.

I actually chilled it after making it. Just a preference thing

but I don't like warm salsa. Room temp or chilled for me.

As far as it going bad, no. I wouldn't go that far. I think the

recipe merely means it is at its best during the first three

days, that is if it lasts that long, which in my house it does

not. *lol*
