Guest guest Posted May 1, 2003 Report Share Posted May 1, 2003 Steamed Lemon Broccoli 1 large bunch of broccoli, cut into spears 1 medium onion, halved and thinly sliced 1 cup thinly sliced celery 3 garlic cloves, minced 3 Tbs butter or margarine 2 tsp grated lemon peel 1 1/2 tsp lemon juice 1/2 tsp salt (optional) 1/4 tsp pepper Place broccoli in a basket over 1-inch of boiling water in a saucepan. Cover; steam for 5 to 6 minutes or until bright green and crisp-tender. Rinse in cold water; drain and set aside. In a skillet, saute the onion, celery and garlic in butter until vegetables are tender, about 5 minutes. Add the lemon peel and juice, salt if desired, pepper and broccoli; heat through. Yield: 4 servings. Nutritional analysis: One serving (prepared with reduced-fat margarine and without salt) equals 105 calories, 149mg sodium, 0 cholesterol, 12gm carbohydrate, 5gm protein, 6gm fat, 5gm fiber.
