how about shepard's pie?

 

 

(again, i'm bad with measurements, and it will all depend on the volume of

veggies used)

prepare several types of your favourite veggies as desired (i like to sautee

onions, garlic, brocolli, cauliflower, summer squash, spinach, and corn in a

bit of olive oil), add a package or two of veggie ground round if desired,

and put into a casserole dish large enough to hold everything with some extra

room on top. meanwhile, boil several potatoes until mashable. mash them

with enough veggie broth and/or soy milk to make the potatoes smooth, and add

any seasonings you like (i usually add a bit of salt and pepper and some dill

and basil). top the veggies with the mashed potatoes (they should

completely cover the top of the casserole), and bake at 350 degrees until

everything is warmed through and the potatoes are golden and crusty. i like

to make " stripes " with a fork on the potatoes before baking them; this gives

a really nice crust.

 

you could also skewer some seitan and/or pressed extra-firm tofu and grill it

with your favourite marinade...

 

i saw a recipe for veggie haggis somewhere, too. if i find it, i'll pass it

on.

'Tain't medieval! No such beastie existed - even not allowing for the whole

" potato is a new world food " thing. I have never seen a medieval recipe for

anything even vaguely resembling shepherd's pie.

Still, at an event where baked spuds and turkey legs are served, do you

suppose anyone would even notice?
