Guest guest Posted April 26, 2003 Report Share Posted April 26, 2003 This is a recipe I altered, to deal with our current dietary preferences (no meat, low fat, low cholesterol). It got mixed reviews. I loved it – I thought it was rich and creamy and full of flavour. The bf wasn’t thrilled with it, and said he didn’t like the taste of the fake meat. The recipe was written for a slow cooker, but I think it would be easy to prepare it on the stovetop, or in a covered casserole dish in the oven as well. “Hamburger” Stroganoff 2 cups Veggie crumbles, TVP, or other ground beef substitute (I used a package of Smart Menu ground “beef”) 2 tbsp all purpose flour 1 tsp salt ¼ tsp pepper 1 large onion chopped (about 1 cup) 10 oz condensed cream of celery soup (I used a fat free one) 1 tsp red wine vinegar 2 tbsp orange juice 1 cup sour cream (I used a fat free one) 1 lb fettuccine noodles Scramble fry the veggie crumbles in a non-stick pan. Mix in flour, salt, pepper, and onion. Stir in soup, vinegar and orange juice. Turn into 3 ½ litre slow cooker. Cover and cook on low for 5 – 6 hrs or on high for 2.5 – 3 hrs. Stir in sour cream and heat through. Cook noodles as directed on package. I wouldn't give up on the recipe; there are so many meat-sub alternatives out there and you are bound to stumble across some that work better in certain recipes than others. I think if he didn't like the Smart Menu brand TVP, you might try using the MorningStar Farms burger crumbles instead. They are found in the freezer section in 12oz. bags and they have a very pleasant flavor on their own. Just an idea.
