Guest guest Posted April 26, 2003 Report Share Posted April 26, 2003 Greens with Herb Dressing 6 Tbs olive or vegetable oil 2 Tbs cider or red wine vinegar 2 tsp Dijon mustard 1 tsp each minced fresh tarragon and thyme OR 2 tsp minced fresh herbs of your choice 2 tsp lemon or lime juice 2 garlic cloves, minced 1/4 tsp salt Dash pepper 8 cups mixed salad greens In a jar with a tight-fitting lid, combine the first eight ingredients and shake well to blend. Place the greens in a large salad serving bowl. Drizzle with dressing and toss to coat. Serve immediately. Yield: 8 servings Nuritional Analysis: One serving equals 102 calories, 119mg sodium, 0 cholesterol, 2gm carbohydrate, 1gm protein, 10gm fat, 1gm fiber.
