Veggie Pockets

 

1 1/2 medium onion, thinly sliced

1 Tbs olive oil

1 Tbs barbecue sauce

2 cups broccoli florets, cooked and drained

1 cup cauliflowerets, cooked and drianed

1/8 cup reduced fat mayonnaise

1/4 cup each grated carrot, red cabbage and

yellow summer squash

3 pita breads (6 inches) halves and warmed

1 cup shredded lettuce

 

In a saucepan, cook onions in oil until tender.

Add barbecue sauce; cook and stir for 2 minutes.

Add broccoli and caulifloower, heat through. Stir

in mayonnaise, carrot, cabbage and squash;

heat through. Fill each pita half with about

2 tablespoons of lettuce and 1/2 cup vegetable mixture.

Yield: 6 servings

Nutritional Analysis: One serving equals 143 calories,

218 mg sodium, 1 mg cholesterol, 24 gm carbohydrate,

4 gm protein, 4 gm fat, 3 gm fiber.

Diabetic Exchanges: 1 starch, 1 vegetable, 1 fat
