Guest guest
This is Mindy from Missouri (about an hour from the Arch). I've been on this list for just a few weeks. Right now I am sneaking up on vegetarianism slowly but stealthily like a great cat. I aspire to become a lacto/ovo, which I almost am. Supreme pizzas sometimes foil my efforts. This week I waited on a man who changed the light bulb on top of the St. Louis Arch. I helped him look for work (he's laid off) and grilled him like a sandwich for about 30 minutes about the Arch, what it was like on top of it, inside it and all around it. I learned a lot. As far as salad goes, my favorite one is always made from whatever I find lurking in my refrigerator and cupboard -- usually red leaf lettuce, sliced green onion and green pepper, tomato, lemon basil from my backyard, black olives and (since I am not vegan) a hard boiled egg and low-fat mozzarella cheese. Over this, I pour sun- dried tomato dressing. Yum Yum! Occasionally I will drop some nuts on top and maybe a peeled and sliced tangerine or orange for flavor and color. Salads are a party in a bowl! Party on! ~ Mindy
Guest guest
Mindy - I love the way you write! What is it you do for a living? If supreme pizza's foil your vegetarian attempts, why not try the Boca or Smart brands? They've got sausage and pepperoni alternative options.
