This is a great recipe. It is relatively easy and makes lots, but it does take two hours to cook. It is somewhat spicy, so some might want to cut back on the Tabasco. Southern Red Beans & Rice 2 1/4 - 3 cups dry red beans. Cook until done. (or 3-4 cans, drained) 1 large onion, chopped 2 tablespoons oil 2 tablespoons liquid smoke 2 tablespoons Cajun seasoning 2 tablespoons Tabasco sauce 1 1/2 cups dry brown or white rice, cooked Saute onions in oil until tender. Add all remaining ingredients except rice. Add 2 cups water. Simmer, stirring occasionally, adding more water as needed. Cook uncovered about 2 hours until sauce is thick. Serve over rice. I will go cautiously with the tabasco.... even though hot is yummy; too much is hard to fix! *lol* I am glad the pumpkin soup recipe was enjoyed.
