Guest guest Posted April 15, 2003 Report Share Posted April 15, 2003 Hello all, Im on a very, very strict diet. I cant have any breads except millet, cant have dairy, and have to limit my fruit. I basically eat 2 small meals a day, either a salad with a special dressing that is vinegar-gluten-preservative free, or stir fry vegetable. These were fine at first but Im really getting sick of them. Hopefully I can go off this diet within the next couple weeks, but until then I need some ideas. Anyone have any recipies that taste good? Guest guest Posted April 15, 2003 Report Share Posted April 15, 2003 hi michele, i'm very familiar with the candidia diet (i spent 8 months on it and am trying to psych myself up to get back on it). it's a hard diet to follow, esp. when vegetarian. i have some of questions for you.... how long have you been on the diet? are you ovo-lacto vegetarian? are you taking supplements to help eliminate the candida? can you have corn? are you using yeast-free breads? oh, and who put you on this diet? a doctor? nutritionist? or yourself? lol, sorry for all the questions, i'm just curious. i'll try to post some candida diet recipes in the next few days, until then, here's some ideas. 1. hummus sandwhiches on yeast-free spelt bread with veggies (avocado, lettuce, cucumber, tomato, onion, peppers, etc) and soy cheese. my hummus 1 can chickpeas, drained 1/4 cup tahini 1 clove garlic, chopped juice from one lemon 1/2 tsp. cumin 1/4 tsp. cayenne (or to taste) 1/2 tsp. salt blend all ingredients in food processor with enough water and olive to desired consistency. 2. amy's black bean enchiladas 3. bean tacos made with beans of your choice (pinto, black beans, and black eye peas are my favorites), soy cheese (or not), salsa (homemade without vinegar or sugar), lettuce, and tomato in corn tortillas. 4. many indian dishes are acceptable....check the internet for veggie indian recipes and serve on brown rice. 5. eggs scrambled with veggies (onions, peppers, tomato, spinach, etc...) 6. corn or quinoa pasta with homemade tomato sauce 7. veggie/bean chilis the vegan boca burgers may be ok, check the label. put these on the yeast free breads. i made my own salad dressing using lemon juice, olive oil, salt and pepper. i think there is actually a candida cookbook out there...maybe check the library. i hope some of these ideas are helpful to you, michele. if you ever want to email me, please do....i have lots of info on this topic....i'd be glad to share what i know. take care, susie --- " Michele O.
