Guest guest Posted April 14, 2003 Report Share Posted April 14, 2003 You can skip the butter to make this vegan, or sub-in some vegan margarine in place of butter. This is also good served warm. Garlic-Mushroom Appetizer 1 cup chopped onion 1/2 cup olive oil 3 Tbs butter or margarine 2 lbs fresh mushrooms, sliced 1 can 928 oz) crushed tomatoes in purree, undrained 1 tsp salt 1/4 tsp pepper 1/2 cup red wine vinegar 1 bunch fresh parsley, finely chopped~*~ 3 garlic cloves, minced Sliced French bread In saucepan, saute the onion in oil and butter until transparent. Add the mushrooms; cook for 2 minutes. Add the tomatoes, salt and pepper; cover and simmer for 20-30 minutes. Add the vinegar, parsley and garlic; mix well. Cover and simmer 10 minutes. Chill for several hours or overnight. To serve, spoon onto slices of French bread.
