Hi, I've not been here for too long but I thought I'd make a post and see what I got back. I'm currently dating a vegetarian who also happend to be jewish. He's not all that strict because he will eat fish and eggs and dairy, but with passover comming up it's a bit more difficult to make sure he's getting all the things he needs. Anyone out there have any recipies that might fit the bill (no processed grain products)? *Any* suggestions/help would be appreciated. Hello, One of the things I inherited from my late mother was a cookbook, " The Complete American-Jewish Cookbook " , by Anne London. Now this is one great cookbook. My youngest daughter wanted it, " No way " . So I went to ebay and bid on a revised ed. for her. got it for $6.50, Anyway it is a great place to find recipes for Passover and is filled with ideas for veggies. Kosher as well, so you have less chances of getting something icky mixed in without warning. here is one recipe that my family loves: Hungarian Lentils 1/2 lb lentils 1 onion, minced 2TBL cooking fat(oil) 2 TBL flour 1/4 cup cold water 1 TBL sugar 1 tsp salt 2 TBL vinegar Hot Buttered Toast Pick over and wash lentils. well. Soak overnight in cold water to cover. Drain and cover again with cold water. Simmer until tender. Saute onion in hot fat until lightly browned. Blend in flour. Add water, sugar, salt, and vinegar. Mix well. Cook until smooth and thickened, about 2 minutes. Pour over lentils. Serve very hot on toast. Serves 6 Taken from the " Complete American-Jewish Cookbook " by Anne London, The World Publishing Co. 1952 ed. The only changes I have made to this is to use Canola oil for the fat, and I sometimes put it over rice or cous-cous instead of toast. My family loves it and since there are only three of us and there are never any leftovers. We eat every bit of it.
