Easy Black Bean Enchiladas

 

2 cans black beans, drained

15 ounce can enchilada sauce

4 ounce can chopped green chiles, drained

4 ounce can sliced black olives

tortillas (I like Garden of Eatin's whole wheat

tortillas, avalible at natural food stores)

1 1/2 to 2 cups shredded soy (or regular) cheese

 

Heat oven to 350. Spray 9 x 12 " baking pan with

nonstick spray, spread 1/4 cup enchilada sauce onto

bottom of pan. Mix beans, 1/2 cup of enchilada sauce,

chiles, and 3/4 cup of cheese. Spoon into tortillas.

Roll, place seam side down in pan. Pour remaining

enchilada sauce over top. Sprinkle with remaining

cheese and black olives. Bake uncovered for 15

minutes until cheese is melted, then broil until

cheese is brown. Serve.

 

Please note: this recipe is very easy and quick. If

you have more time (or want added nutrition), add a

diced green, red, or yellow pepper, diced jalepenos,

small diced onion, diced green onion, etc. to the bean

mixture. Steam or microwave veggies before adding to

bean mixture. It is very pretty with a few sliced

pepper rings added on top of the cheese.
