I tend to play around with recipes and make chili a bit different each time, so I jotted it down this time as I was doing it so I could share it here. Easy Vegan Chili 1 Tbs olive oil 1 medium onion, chopped 1 medium green pepper, chopped 1 medium yellow pepper, chopped 1 medium sweet red pepper chopped 1 can (4oz) diced green chilis, drained 1 can (15oz) tomato sauce 1 can (14.5oz) diced tomatoes with jalapeno, undrained 1 pkg. (12oz) MorningStarFarms crumbles 4 cups cooked beans ~*~ 4 tsp chili powder 1 tsp minced dried garlic 1 tsp ground cumin 1 tsp dried oregano 1 tsp dried basil 1 tsp Cajun seasoning In a large stew pot, saute the onions and peppers in the olive oil until the vegetables sweat and the moisture is mostly evaporated. Add all the remaining ingredients; stirr well. Cover and simmer for 1 hour, stirring every so often. Add additional seasonings to fit your palate. Serve over your favorite cooked rice. ~*~ I used a medley of beans I had on hand; black-eyed peas, white kidneys, pintos and small red beans.
