Guest guest Posted April 3, 2003 Report Share Posted April 3, 2003 We had this the other night. It wasn't a show-stopper, it rated an " it's OK " by the guys (DH & son). It was quick and easy to make, and seems very versatile, like you could vary it by using pasta or diced potatoes instead of rice, and the veggies of your choice. Here is the recipe as taken from the package; I've included my substitutions below: Kathie's Vegetarian Casserole 1/4 c. margarine 3 T. flour 2 c. milk 3 oz. cream cheese 1 c. Cheese Whiz or 1 c. grated american or cheddar 1 pkg frozen broccoli, carrots & onions 2 c. cooked wild rice. Melt margarine, add flour and stir, making a roux. Add milk and stir over medium heat until thick. Add cheese and stir until melted. Stir in vegetables and wild rice. Pour into casserole. Bake @ 350 for 45- 60 minutes. My substitutions: We don't eat dairy, so I used soy milk/soy cheddar. I left out the cream cheese and added a little extra soy milk as it seemed dry, and some nut. yeast. I used a pkg of " California blend " : broccoli/carrots/cauliflower For rice, I used a brown rice/wild rice blend that our bulk food store sells.
