They are, I imagine, something a Hobbit might have served with tea. Puffs with Honey Butter 1/4 cup plus 3 Tbs butter (no substitutes), softened, divided 1/4 cup honey 3 eggs 1 carton (8oz) plain yogurt 2 cups all-purpose flour 2 tsp baking powder 1 tsp baking soda 1/2 tsp ground nutmeg 1/4 tsp salt Oil for deep-fat frying In a bowl, combine 1/4 cup of butter with the honey until smooth; set aside. In a mixing bowl, beat the eggs until lemon colored. Add the yogurt and remaining butter. Combine the flour, baking powder, baking soda, nutmeg and salt; stir into yogurt mixture. In a deep-fryer or electric skillet, heat oil to360 degrees. Drop batter by teaspoonfuls into the oil. Fry until golden brown, about 2 minutes. Drain on paper towels. Serve warm with honey butter.
