Guest guest Posted April 2, 2003 Report Share Posted April 2, 2003 This is very easy and delicious. It makes a lovely side dish or you can serve it over your favorite rice or pasta for a light meal. Just take care to check the crouton brand label you are using, if you want to make it a vegan dish. I used Mrs. Cubbison's brand seasoned dressing cubes. Enjoy! Green Pepper Saute 3 large green peppers, cut into 1/2 inch strips 1 cup sliced celery 1 small onion, thinly sliced 1 garlic clove, minced 2 Tbs olive oil 1 can (15oz) tomato sauce 1/2 tsp dried basil Salt and pepper to taste 1/2 cup crushed seasoned salad croutons In a large skillet, saute the peppers, celery, onion and garlic in the olive oil until tender. Stir in the tomato sauce and basil; season with salt and pepper to taste. Simmer, uncovered for 8 to 10 minutes or until vegetables are tender and sauce is thickened. Spinkle with crushed croutons.
