Guest guest Posted March 31, 2003 Report Share Posted March 31, 2003 I got this recipe from the Boca newsletter ,meatlessmonday.info, and really loved it! I used to love Reuben sandwiches. I used both the mustard and the Thousand Island dressing and it was a great quick sandwich. Jane Sausage Reuben Sandwich 1 frozen BOCA Meatless Smoked Sausage 1/4 cup sauerkraut, drained 1 slice Swiss cheese 1 slice rye bread, toasted COOK sausage as directed on package. CUT sausage in half lengthwise and brown in skillet on medium heat. Add sauerkraut and cheese, cover. Heat 2 minutes or until cheese melts. SERVE sausage on toast slice with mustard or reduced fat thousand island salad dressing. Makes 1 serving. Great Substitute: Substitute BOCA Meatless Bratwurst for the Smoked Sausage.
