We have not tried it with sweet taters yet, but if you enjoy them I bet this would be delicious. Cajun Potato Wedges 4 medium sweet potatoes or baking potatoes (about 3 lbs) 3 Tbs olive or other vegetable oil 1/2 to 1 tsp hot pepper sauce 2 Tbs Cajun seasoning blend Cut each potato into eight wedges. In a large bowl, combine oil, hot pepper sauce and 2 tablespoons seasoning mix. Add potatoes and stir evenly to coat. Place in a 15x10x1 inch baking pan sprayed with non-stick cooking spray. Bake, uncovered, at 450 degrees for 15 minutes; turn. Bake 8 to 10 minutes more or until the potatoes are tender inside, crisp outside. Yield: 8 servings ~ PT ~ I don't want to live.
