Guest guest Posted March 30, 2003 Report Share Posted March 30, 2003 I found this recipe a long time ago in some magazine, but the quantities were huge as it was in some article for feeding a crowd or for use as a potluck dish. I reduced it down to serving 7 to 8 people, which is still a bit much for our house. It is a nice salad course item for summer BBQs out on the patio when guests are here. Most everyone likes it and asks for the recipe, which I find to be very simple. You can pretty much use whatever viniagrette dressing you prefer instead of the one provided. Enjoy! Beans and Greens 1/2 cup olive oil 1/8 cup vinegar 1 tsp salt 1 tsp sugar 1/4 tsp celery seed 1/4 tsp paprika 1 can (14.5 oz) cut green beans 4 cups torn lettuce 2 cups torn fresh spinach 1 cup shredded Swiss cheese In a jar with a tight-fitting lid, combine the first six ingredients; shake well. Pour over green beans; let stand for 15 minutes. Just before serving, drain beans, reserving marinade. In a salad bowl, combine the beans, lettuce, spinach and Swiss cheese. Drizzle with reserved marinade; toss to coat.
