We tried it last night for dinner and it was a hit. I served it with an olive salad that I'm currently addicted to also. I get the hummus mix at Wild Oats, but I think that Kroger is carrying it now. 1 pkg spinach parmesean hummus prepared 1/2 cup jack cheese, shredded 1/4 cup black olives, chopped 24 mushrooms for stuffing ( i used portabellas instead, so it just depends on the kind you want to use) Mix hummus, cheese, and black olives. Remove stems from mushrooms. Fill mushrooms with hummus mixture. I don't know why I haven't made any large portabellas as a main dish item before. I saw a recipe a month or so ago in the Vegetarian Times magazine ... or maybe it was in Sunset magazine, that featured a portabella mushroom cap stuffed with couscous.
