[Recipe] Spinach Mushroon Hummus Stuffed Mushrooms

I got this recipe from the back of a package of spinach parmesean

hummus made by Fantastic Foods. We tried it last night for dinner

and it was a hit. I served it with an olive salad that I'm currently

addicted to also. I get the hummus mix at Wild Oats, but I think

that Kroger is carrying it now.

 

1 pkg spinach parmesean hummus prepared

1/2 cup jack cheese, shredded

1/4 cup black olives, chopped

24 mushrooms for stuffing ( i used portabellas instead, so it just

depends on the kind you want to use)

 

Mix hummus, cheese, and black olives. Remove stems from mushrooms.

Fill mushrooms with hummus mixture. Bake at 375 for 15 minutes (the

big mushrooms took a bit longer)

I love stuffed mushrooms. I don't know

why I haven't made any large portabellas

as a main dish item before. I saw a recipe

a month or so ago in the Vegetarian Times

magazine ... or maybe it was in Sunset magazine,

that featured a portabella mushroom cap stuffed

with couscous. Mmmmmm.
