Guest guest Posted March 26, 2003 Report Share Posted March 26, 2003 This is a nice side dish to serve at any meal, but makes a lovely presentation for when you have company; hence the name. The herbs and the color from the carrots help make it look special as well as adding extra flavor. Company Potato Casserole 5 cups cooked cubed peeled potatoes 1 1/2 cups sour cream 1 1/4 cups shredded Swiss cheese 1/2 cup shredded carrot 1/4 cup chopped onion 2 Tbs minced fresh parsley 1/2 tsp salt 1/2 dill weed 1/4 tsp pepper 1/4 tsp paprika In a bowl, combine the potatoes, sour cream, one cup of the cheese, carrot, onion, parsley, salt, dill and pepper. Transfer to a greased 8 inch square baking dish. Sprinkle with the remaining cheese and paprika. Bake, uncovered, at 350 degrees for 25 to 35 minutes or until bubbly.
