Guest guest Posted March 25, 2003 Report Share Posted March 25, 2003 For me this is a main couse item, but it is also a nice looking, delicious tasting side dish that practically everyone enjoys; even those who normally don't favor cauliflower. My son picks out the mushrooms... oh well, at least he gives them to me. Cheesy Cauliflower 1 large head cauliflower (2 pounds), broken into florets 1/3 cup butter or margarine 1/3 cup all-purpose flour 1/2 tsp salt 1/4 tsp pepper 2 1/2 cups milk 1 cup frozen peas 1/2 cup sliced fresh mushrooms 1 1/2 cups shredded cheddar cheese, divided In a covered saucepan, cook cauliflower in a small amount of water until crisp-tender. Meanwhile, in another saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil, stirring constantly; cook for two minutes or until thickened. Remove from heat. Drain cauliflower. Add peas, mushrooms, one cup of the cheese and cauliflower to the milk mixture; stir gently. Transfer to a greased 2 1/2 qt. baking dish. Sprinkle with remaining cheese. Cover and bake at 350 degrees for 15 to 20 minutes. Uncover; bake 10 minutes longer or until heated through.
