Guest guest Posted March 24, 2003 Report Share Posted March 24, 2003 Herbed Cheese Pasta 2 Tbs butter or margarine 1 large onion, finely chopped 3 cloves garlic, minced 16 oz of small pasta~ macaroni or small shells 1 cup light sour cream 2 cups part skim rocotta or cottage cheese 1 Tbs dried parsley 1 Tbs dried basil 1 Tbs dried oregano salt and pepper to taste 1 Tbs grated Parmesan cheese Melt the butter in a large saute pan and gently saute the onion and garlic until the onions are tender; about 5 minutes. Meanwhile cook the pasta according to package directions. Mix the sour cream and the ricotta together. Add the herbs and seasonings and stir well. Put this mixture in with the saute and warm it gently, stirring often. Drain pasta and place in casserole sprayed with olive oil non-stick cooking spray. Pour the cheese mixture over the pasta and stir well to combine.
