When I first saw this recipe posted, the first thing I thought of was making this for my Mom...brown rice, tofu, spinach...perfect for her. Well of course, loving cooking, I had to manipulate the recipe just for the fun of it. Bottom line, this soup came out absolutely terrific as far as I am concerned (Mom hasn't tried it yet..still has to come out to pick it up). I made it last night. I have to give a big shout out and thank you to Susie for the recipe and inspiration. This is not something I would ordinarily try, as per the brown rice and tofu. Anywho after some adjustments and of course having to try it to see how the flavor was and all, I became a fan and had a nice bowl of it for lunch today....good stuff. Here are my notes.... I added 2 jalapenos and sauted those, the onion and garlic in oil. Then I added the rice and browned slightly. I then continued as the recipe suggested. Overall I added 4 veggie cubes. After the first simmer, I added 1 carrot (diced into small cubes) and a green zuchini* (sliced and quartered). Instead of crumbling the tofu, I diced it. My simmer time was considerably longer. To season, I added a lot of dried oregano and a lot of S & P, remember this recipe yields a lot of good soup. Think of all the nice ingredients... brown rice, onion, jalps, garlic, zuchini, carrots, tofu and spinach...it's like energy in a bowl. Well anyway thanks again to Susie. I will definitely be making this badboy again. If only I could turn back time a couple of months ago when it was slightly cold in good ol' Tejas.
