This recipe turns out wonderfully every time I make it and it tastes exactly like it does in the restaurant. It's not low in fat though. I've tried making it using less butter and using half and half instead of cream and it just wasn't as good. Oh well....it's way worth the fat grams! La Madeleine's Tomato Basil Soup 4 cups (8 to 10) tomatoes, peeled, cored, and hopped, or 4 cups canned whole tomatoes, crushed. 4 cups tomato juice or part tomato juice and part vegetable stock 12 to 14 washed fresh basil leaves (I've used 2-3 tsp. dried when i couldn't get fresh basil) 1 cup heavy cream 1/4 pound sweet unsalted butter (1 stick) salt to taste 1/4 teaspoon cracked black pepper Combine tomatoes, juice or juice and stock in saucepan. Simmer 30 minutes. In blender or food processor, puree mixture, with basil leaves added in small batches. Return to saucepan. Over low heat, stir in cream and butter. Add salt and pepper. Garnish with basil leaves and serve with your favorite bread.
