Guest guest Posted March 22, 2003 Report Share Posted March 22, 2003 this is a soup i used to make a lot when i worked at a little health food store (we had a lunch counter and juice/smoothie bar too). the customers really liked it. spinach tofu soup 12 cups water 1 1/2 cups brown rice 2 cubes vegetarian bouillon 1 large onion, chopped 5 cloves garlic, minced 1 pound firm tofu, crumbled 10 ounces fresh spinach, chopped combine water, rice, bouillon, onion, and garlic. bring to a boil; reduce and simmer for 20 minutes. add tofu, simmer 15 minutes. add chopped spinach and cook an additional 5 minutes. season with garlic salt.
