Green Salad with Goat Cheese, Apples and Toasted

Pecans

 

salad:

1/2 head romaine lettuce

1/2 head red Leaf lettuce

1 teaspoon lemon juice

1 green apple, peeled and thinly sliced

1/2 cup toasted pecans, coarsely chopped

4 oz fresh goat cheese, crumbled

dressing:

1/3 cup extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon lemon juice

1/2 teaspoon salt

Freshly ground pepper, to taste

 

Whisk together all ingredients to make salad dressing.

Toast pecans, slice apples and toss with lemon juice.

Tear lettuces into pieces. Place all ingredients in

salad bowl and toss gently with dressing right before

serving.

 

Serves 4
