Makes a nice " friday movie night " snack, and you can really alter the flavor depending on what spices you choose, making it a bit different every time. Crisp Potato Skins 6 medium potatoes (about 2 lbs) 1/4 cup olive oil 1 tsp soy sauce Coarse salt, sour cream, chopped chives and/or bacos (soy bacon-like bits) Bake potatoes at 400 degrees for 45 minutes or until tender. Cool, then cut into quarters lengthwise. Scoop out the pulp, leaving 1/8 inch in shells. Refrigerate pulp for use in other recipes. Increase oven tempurature to 500 degrees. Combine the oil and the soy sauce; brush on both sides of the potato skins. Place on a baking try. Bake for 10 to 12 minutes or until crisp. Top with salt, sour cream, chives and/or your favorite unbacon bits. Yield: 6 servings ~ PT ~ I will not let anyone walk through my mind with their dirty feet. ~Mohandas K.
