It is really inexpensive to do if you buy at a market with a bulk-bin spice counter. I will buy only enough for a month's worth, or what I estimate I might use up in a month, then buy fresh as needed. We use a lot of herbs and spices here; I think most vegetarians are rather liberal in their use. We all seem to know what we are doing and love flavorful foods.
