Excellent reminder, Shawn. Yes, if you have older dried

herbs and spices, just pitch them and buy some fresh.

It is really inexpensive to do if you buy at a market with

a bulk-bin spice counter.

I will buy only enough for a month's worth, or what I

estimate I might use up in a month, then buy fresh as

needed. We use a lot of herbs and spices here; I think

most vegetarians are rather liberal in their use. We all

seem to know what we are doing and love flavorful

foods. There is nothing dull, bland or monotonous about

being a vegetarian. :)
