I got the basic recipe idea from Linda McCartney's Home Cooking book, but had to adjust it a bit to fit our tastes. I just couldn't imagine a casserole like this without garlic. I may end up adding more than one clove, too, but for now this is how I have planned to prepare it. I will report back tomorrow on how it was received by the rest of the family. Beefless Rice Casserole 3 Tbs olive oil 1 stick celery, chopped 1 large onion, chopped 1 clove garlic, minced 1 cup white rice 4 vegetable burgers, cubed [used Boca brand] 1/2 cup vegetarian beef-style broth 2 cans (14.5 oz each) diced tomatoes, undrained 1 Tbs soy sauce 1 tsp chili powder 1 tsp oregano 1 tsp Italian seasoning Salt and fresh ground pepper to taste Pre-heat the oven to 325 degrees and spray casserole dish with non-stick olive oil cooking spray. Heat olive oil in a sauce pan and saute the onion, celery and garlic until just tender. Add the rice and veggie burger chunks, and stir-fry a few minutes until the burger bits are lightly browned. Next add the vegetable broth, chopped tomatoes, soy sauce, herbs and salt and pepper. Stir well and allow mixture to come to a boil. Remove from the heat and transfer to the prepared casserole dish. Okay, here is the report back on how this recipe came out. I followed the baking instructions as put forth in the LM cookbook but when I took it out of the oven the rice was not tender yet. It was still hard in the middle and the center of the casserole was not any more than just heated through. I knew that in order for the casserole to have the rice swell it would need to boil and bubble a bit. So I removed it from the oven and microwaved it on high for 5 minutes, keeping the Corningware casserole dish glass lid still on to trap the steam. Then I stirred it and put it back in for 5 more minutes. That seemed to do the trick. It was delicious. Everyone in my family loved it and it is a vegan dish, so just perfect for my Vegan-Thurday dinner, and also for the Great American Meatout. Oh yeah, I adjusted the garlic to three rounded tsp of minced and I think that made the dish even better. I just couldn't imagine it without any, as it was written.
