Guest guest
this is one of my little inventions; always a big hit though. takes about 5 minutes. INGREDIENTS: -various cans of beans of your choice; no need to drain them (i like using scarlet runner beans, trout beans, and black beans for tortilla soup and black beans/chili beans/pinto beans for chili) -1 can or package of frozen corn for each 2-3 cans of beans you use; use more if you love corn -1 jar of salsa (i love habanero hot, but make it as spicy or mild as you please!) for every 2 cans of beans -a few shakes of the following seasonings, to taste: -- dried cilantro -- cumin -- chili powder -- liquid smoke -- garlic powder -- pepper -- salt dump all of the above in a pot and bring to a boil. for tortilla soup: blend it all with a hand blender (or tabletop blender) until smooth; serve with baked corn or tortilla chips. for chili: add a package of veggie ground round or about 1/2 cup of TVP per 2-3 cans of beans to the mixture if you like. you can also add a can or two of tomato paste if you like cery tomato-y chili. mix well, heat, and serve. as you can see, this isn't a very organized recipe; i tend not to measure things much when i cook. don't worry much about the proportions; it's very hard to mess this up! enjoy! melody www.melodysmusic.net
