It doesn't need the animal flesh, and tastes just wonderful without. It looks almost as good as it tastes. Even kids who are fussy about eating their veggies will find it difficult to resist a piece of this. Broccoli Carrot Ring 2 tubes (8 oz each) refrigerated crescent roll dough 1 1/2 cups shredded Swiss cheese 1/2 cup finely chopped mushrooms 2 medium carrots, grated to a fine shred 2 1/4 cups chopped fresh broccoli 1 small onion, minced 1/4 cup minced fresh parsley 2 Tbs Dijon mustard 1 tsp lemon juice Unroll crescent roll dough and place the triangles on a 12 inch pizza pan, forming a ring with pointed ends facing outer edge of pan and wide ends overlapping. Lightly press wide ends together. Combine the remaining ingredients in a bowl and spoon over the wide ends f the rolls. Fold the points over filling and tuck under wide ends (filling will be visible). Bake at 375 degrees for 20 to 25 minutes or until golden brown.
