Guest guest Posted March 17, 2003 Report Share Posted March 17, 2003 Here is a recipe I tweeked and baked for us last night. It is more of a loaf cake than a bread; at least to me. Made a lovely dessert for our evening tea. As per my son's request, I left out the walnuts, but you may put them in if you wish. I think walnuts would taste quite good. It was my daughter's idea to add the chocolate chips instead, and my idea to incorporate some whole wheat flour and soy milk to the recipe. I hope you enjoy it as much as we did. Chocolate Banana Bread 1/2 cup butter or margarine, softened 1 cup sugar 2 eggs 1 cup mashed ripe bananas (about 3) 1/4 cup soy milk 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup baking cocoa 1 tsp baking soda 1 tsp salt 1/2 cup chocolate chips 1/2 cup chopped walnuts (optional) In a mixing bowl cream the butter with the sugar. Add the banana, eggs, soy milk, and vanilla; blend well. In another bowl, sift together the flours with the cocoa, baking soda and salt. Combine with the banana mixture until well blended and smooth, then fold in the chocolate chips and walnuts if desired. Transfer to a greased 9x5x3 inch loaf pan and bake at 350 degrees for 60 to 65 minutes, or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from the pan to cool on a wire rack. Yield: 1 loaf ~ PT ~ Leprechauns, castles, good luck and laughter. Lullabies, dreams and love ever after.
