All the food groups in one simple dish 1/2 cup (uncooked) long grain rice [i used Uncle Ben's " original blend " with 32 herbs and spices] 4 large bell peppers 1 1/2 pkgs MSF crumbles 1 package vegetable soup mix 1 10-oz. can condensed tomatoe soup 1/2 onion, finely chopped 3 cloves garlic, minced 3 tablespoons chili sauce or ketchup 1 tablespoon extra virgin olive oil Preheat oven to 350°F. Prepare rice according to package instructions for 2 servings. Halve peppers and remove seeds, stems, and membranes. Place in small square baking dish. Cook rice according to directions. In a large pan, heat oil and saute onions and garlic until soft. Add MSF crumbles and heat thoroughly. Combine together cooked rice, MSF crumbles, vegetable soup mix, 2/3 of the can of soup, and 2 tablespoons chili sauce. Mix well; stuff peppers with mixture. In a small bowl combine remaining ketchup and tomato soup and pour over stuffed peppers. Cover loosely with tinfoil. Bake for 30 to 45 minutes, or until peppers are tender and meat mixture is cooked thoroughly. For a faster clean-up, line the bottom of the baking dish. Enjoy!
