Guest guest Posted March 16, 2003 Report Share Posted March 16, 2003 This is another of those recipes courtesy of the bf following me around the kitchen writing down what I’m doing. Its starting to come in rather handy… 1 small zucchini, sliced in half lengthwise and seeded 2 plum or roma tomatoes, chopped ½ small onion, chopped fairly fine 3 cloves garlic, minced olive oil basil parsley salt and pepper parmesan cheese, freshly grated for garnish Sautee onion and garlic in olive oil until onion is translucent, being careful not to overcook. Season with basil, parsley, salt and pepper to taste, then stir in the tomatoes and remove from heat. Fill each zucchini half with the tomato mixture and sprinkle with parmesan cheese. Place the zucchini halves in a shallow pan with a bit of water in the bottom and cook about 15 minutes at 350 or until the zucchini is tender but not overdone. You can alter the filling to include whatever you have on hand. I’ve included spinach in the past, or corn or anything that can be cut into similar sized pieces and sautéed briefly.
