They look pretty, with the brightly coloured jam stripe. This time I used orange marmalade, plum jam, blueberry jam, and grape jelly. The plate of cookies looked so pretty with all the colours mixed together! Split Seconds ¾ cup butter or margarine 2/3 cup sugar 1 egg 2 tsp vanilla 2 cups flour ½ tsp baking powder jam, jelly or other fruit preserves Cream together butter and sugar, then beat until light and fluffy. Add egg and vanilla; blend well. Stir in flour and baking powder and mix well. Divide the dough into 4 equal parts. On a lightly floured surface shape each piece into a 12 x ¾ inch roll. Place on ungreased cookie sheet and using the handle of a wooden spoon (or your fingers, which is my preference) form a depression about ½ inch wide down the middle of each roll. Fill each roll with jelly/jam/fruit preserves (takes about 2 – 3 tablespoons for each one, generally). Bake at 350F for 15 – 20 minutes, until lightly golden brown. Cool slightly, then slice each roll diagonally into cookie strips.
