Guest guest Posted March 12, 2003 Report Share Posted March 12, 2003 No more than 40 years ago, a person who confessed to being a vegetarian was viewed by most folks and an oddity. Things have thankfully changed, and for the better. As more people have become aware of the environmental toll that modern farming techniques have taken on our planet's most vital resources, the vegetarian lifestyle is viewed with less skepticism. It is far more difficult for mainstream Americans to turn a blind eye to the facts, and not just those of the environmental variety. There is also growing support from those in the medical community that the vegetarian way of life is healthful. As more studies are done, medical researchers are finding many reasons to praise the vegetarian diet. This is all good news for those of us currently living a vegetarian lifestyle and even for those of you who are adapting several of your meals a week toward meatless menu plans.
