See, I had about 2 cups of left over pumpkin from the vegan pumpkin biscuits I baked last week, and I needed to use it up. I found this delicious sounding recipe in a little Pillsbury baking pamphlet, but their ingredient list called for 1 whole cup of oil! Yikes! I am going to sub in applesauce instead. Also adding some whole wheat flour and brown sugar to the recipe instead of all white flour and white sugar. I will let you know how they come out. Hope everyone is having a nice day so far. Pumpkin Bars 1 cup all-purpose flour 1 cup whole wheat flour 1 cup granulated sugar 1 cup brown sugar 2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1 tsp nutmeg 1/2 tsp salt 1/2 tsp cloves 1 applesauce 16 oz. can (2 cups) mashed pumpkin 4 eggs Frosting: 2 cups powdered sugar 1/3 cup margarine or butter, softened 3 oz. pkg. cream cheese, softened 1 Tbs milk 1 tsp vanilla Mix all the pumpkin bar ingredients together in a bowl on low. Increase mixer speed and beat for 2 minutes. Pour batter into a greased 15x10x1 baking pan. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Allow to cool completely. While it is cooling, mix up the frosting ingredients until nice and smooth. Spread onto the cool pumpkin bars and then slice into bars. Keep in the refrigerator until time to serve and store any left over bars in the frige.
